Description
From the Dutch bottler van Wees, a 9 year old Edradour, distilled in 2011, from cask 23, bottled at 58.5%, one of 648 bottles. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.
The spirit was distilled from unpeated malt in tiny copper stills and worm tubs, for the rich, oily make Edradour is known for. An Oloroso cask held it, shaping the oily spirit over the years. Young and extractive, the cask sheds vanillin (vanilla) and toasted sugars (light caramel) over the creamy make. The tiny stills and worm tubs give an oily spirit that takes the cask well. The cool Highland air of the glen gives a slow, even maturation in the small Edradour warehouses. Signatory's wide cask range gives the small distillery an unusual variety of finishes.
Bottled at a cask strength 58.5%, it is rich. A full, fruity sweetness, with dried fruit, fig and walnut from the cask. Soft chocolate and a nutty oil sit behind the cask. The close is oily and warming, fruit over a gentle oak. This is a rich, oily Highland single malt.
