Edradour from the distillery, a 25 year old, cask Batch 2, at 55.6%, 2332 bottles in all. Edradour is a Highland single malt from the tiny farm distillery at Pitlochry, long called Scotland's smallest. For years its sign read Scotland's smallest distillery; it now calls itself Scotland's little gem.
Made in the smallest of stills and condensed in worm tubs, the worm tubs lending a weighty, oily character. Maturation came in an Oloroso cask, layered over the rich Edradour make. Through the evaporative decades the spirit concentrates, esters folding into dried fruit and beeswax. The cool Highland air of the glen gives a slow, even maturation in the small Edradour warehouses. Signatory's wide cask range gives the small distillery an unusual variety of finishes. A small distillery and a hands on approach shape every cask by hand. Its water comes from the Ben Vrackie springs in the hills above the distillery.
At cask strength 55.6% it is big and oily. Chocolate, dried fruit and a waxy oil, with dried fruit, fig and walnut from the cask. A dried fruit and a polished oak give it depth. A long, nutty finish carries dried fruit and a soft spice. This is a creamy, nutty Highland single malt.
