    A 23 year old Edradour from the Pitlochry bottler Signatory Vintage, 2000, at 56.2%. Dried fruit, chocolate and a nutty oil run through it, with dried fruit, fig and walnut from the cask. Edradour is one of the smallest traditional distilleries in Scotland, at Pitlochry. This is Edradour, one of Scotland’s smallest distilleries.

    The Pitlochry bottler Signatory Vintage bottled this Edradour, a 23 year old, distilled in 2000, from cask 3151, bottled at 56.2%, one of 656 bottles. Edradour is a Highland single malt distilled in a pocket glen near Pitlochry since 1825. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.

    The spirit was distilled slowly in the old farm stillhouse on Ben Vrackie water, for a rich, nutty spirit with a waxy depth. Finished in an Oloroso cask, the wood building over the oily, full bodied spirit. Through the evaporative decades the spirit concentrates, esters folding into dried fruit and beeswax. Maturation in the dunnage warehouses at Pitlochry is slow and steady. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry. A rare Morton refrigerator still cools the wort, one of the last in use in Scotland.

    At cask strength 56.2% it is big and oily. Dried fruit, fig and a creamy vanilla, with dried fruit, fig and walnut from the cask. It is rich and oily, the full bodied spirit shining through. A rich finish ends on dried fruit and a soft oak. This is Edradour, one of Scotland's smallest distilleries.
