Description
A 35 year old Edradour, a distillery bottling, from 1989, cask 368, at 62.3%, 379 bottles in all. Edradour is a full bodied, oily Highland malt made on Ben Vrackie water at Pitlochry. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.
Drawn off the tiny stills and cooled in worm tubs for an oily make, building the creamy Edradour style. Maturation came in an Oloroso cask, layered over the rich Edradour make. Ethereal and fragile, decades draw the oily malt to a honeyed, nutty delicacy of sotolon and old oak. The tiny stills and worm tubs give an oily spirit that takes the cask well. The worm tubs leave an oily weight that carries through the years in cask. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit.
At cask strength 62.3% it is big and oily. A rich, nutty sweetness, with dried fruit, fig and walnut from the cask. A baked apple and a gentle spice lift it. The finish is long, oily and gently spiced. This is a Highland single malt of real character.
