    A 30 year old Edradour from the distillery, at 55.1%. Rich and oily, with dried fruit, chocolate and a creamy vanilla. Water comes from the Ben Vrackie springs above the distillery. Long called Scotland’s smallest distillery, now Scotland’s little gem. Founded in 1825, it keeps the old ways in its farm buildings. This is the little gem of the Highlands at Pitlochry.

    An official release of Edradour, a 30 year old, from 1995, cask 2110, at 55.1%, 129 bottles in all. Edradour is a Highland single malt from the tiny farm distillery at Pitlochry, long called Scotland's smallest. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.

    It was distilled slowly in the old farm stillhouse on Ben Vrackie water, the worm tubs lending a weighty, oily character. It rested in ex-Bourbon oak, oak lactones lending vanilla and a little coconut. In its ethereal years the malt is waxy and oxidative, faded esters and a touch of sotolon (maple, dried fig). Signatory's wide cask range gives the small distillery an unusual variety of finishes. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.

    At a hearty 55.1% it carries real weight. Dried fruit, chocolate and a nutty oil, with a soft vanilla from the oak. A dried fruit and a polished oak give it depth. Dried fruit, chocolate and a soft oak see out a long finish. This is a Highland single malt of real character.
