Description
A 25 year old Edradour, a distillery bottling, from 1999, cask 901, at 55%, 294 bottles in all. Edradour is a Highland single malt distilled in a pocket glen near Pitlochry since 1825. A 2018 expansion added a second still house, the production still small and traditional.
It was run through the small stills with their boil ball purifiers, for the rich, oily make Edradour is known for. A Madeira cask held it, shaping the oily spirit over the years. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, nutty fruit. Refill oak lets the rich, oily Edradour character lead the way. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.
Bottled at a cask strength 55%, it is rich. Dried fruit, chocolate and a nutty oil, with a nutty, raisined sweetness from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. Dried fruit, chocolate and a soft oak see out a long finish. This is the little gem of the Highlands at Pitlochry.
