Edradour from the distillery, a 25 year old, from 1999, cask 811, at 54.8%, 272 bottles in all. Edradour is a small batch Highland malt, owned by the independent bottler Signatory Vintage. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.
Worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for a full, oily make of dried fruit and chocolate. Finished in a Bordeaux cask, the wood building over the oily, full bodied spirit. Through the evaporative decades the spirit concentrates, esters folding into dried fruit and beeswax. Long ageing turns the rich make towards dried fruit, fig and a soft spice. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit. At a natural 54.8% it is full and oily. Dried fruit, chocolate and a nutty oil, with a dark berry and a dry tannin from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. A long, nutty finish carries dried fruit and a soft spice. This is the oily, rich malt of tiny Edradour.
