An official release of Edradour, a 12 year old, from 2012, cask 705, 707, 708, at 48.2%, 1082 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.
The spirit was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for a rich, nutty spirit with a waxy depth. It was matured in a Cabernet Sauvignon cask, the wood working slowly into the rich malt. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. The tiny stills and worm tubs give an oily spirit that takes the cask well. A 2018 expansion added a second still house, the production still small and traditional. Active wood frames the rich fruit without overwhelming the oily Highland spirit.
Bottled at a cask strength 48.2%, it is rich. Dried fruit, nut and a soft chocolate, with a dark berry and a firm tannin from the cask. The texture is oily and creamy, the fruit lifted by vanilla. The close is oily and warming, fruit over a gentle oak. This is a creamy, nutty Highland single malt.
