Description
An official release of Edradour, a 21 year old, from 1999, cask 808 & 810, at 55.7%, 569 bottles in all. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.
The spirit was made in the smallest of stills and condensed in worm tubs, building the creamy Edradour style. It was matured in a Bordeaux cask, the wood working slowly into the rich malt. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. Active wood frames the rich fruit without overwhelming the oily Highland spirit. The worm tubs leave an oily weight that carries through the years in cask. It was bought in 2002 by Andrew Symington of the independent bottler Signatory Vintage.
At its natural 55.7% it is rich and full bodied. Baked apple, marzipan and a creamy malt, with a dark berry and a dry tannin from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. A long, nutty finish carries dried fruit and a soft spice. This is Edradour's full bodied, sherried Highland style.
