The Pitlochry bottler Signatory Vintage bottled this Edradour, an 11 year old, bottled at 58.1%, one of 300 bottles. Edradour is a rich, oily Highland single malt made in the old farm buildings above Pitlochry. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.

It was distilled slowly in the old farm stillhouse on Ben Vrackie water, for a rich, nutty spirit with a waxy depth. Maturation came in a Madeira cask, layered over the rich Edradour make. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, the nutty chocolate deepening. The cool Highland air of the glen gives a slow, even maturation in the small Edradour warehouses. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.

At a natural 58.1% it is full and oily. A rich, nutty sweetness, with a nutty, raisined sweetness from the cask. Fig, nut and a creamy malt fill the middle. The finish is rounded, fruity and gently spiced. This is Edradour, one of Scotland's smallest distilleries.
