A 10 year old Edradour from the Pitlochry bottler Signatory Vintage, distilled in 2013, from cask 521-527-528-529, bottled at 46%. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. A 2018 expansion added a second still house, the production still small and traditional.
It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for a full, oily make of dried fruit and chocolate. Maturation came in an Oloroso cask, layered over the rich Edradour make. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. Long ageing turns the rich make towards dried fruit, fig and a soft spice. Years in oak round the spirit, the dried fruit and chocolate deepening over the oily core. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.
At an approachable 46% it is soft and oily. Baked apple, marzipan and a creamy malt, with dried fruit, fig and walnut from the cask. The mouthfeel is thick and oily, the fruit on a creamy body. A rich finish ends on dried fruit and a soft oak. This is a Highland single malt of real character.
