Description
The Pitlochry bottler Signatory Vintage bottled this Edradour, a 10 year old, distilled in 2011, from cask 429, bottled at 46%. Edradour is a small batch Highland malt, owned by the independent bottler Signatory Vintage. A 2018 expansion added a second still house, the production still small and traditional.
Distilled slowly in the old farm stillhouse on Ben Vrackie water, for the rich, oily make Edradour is known for. An Oloroso cask held it, shaping the oily spirit over the years. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. A small distillery and a hands on approach shape every cask by hand. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.
At an approachable 46% it is soft and oily. Baked apple, marzipan and a creamy malt, with dried fruit, fig and walnut from the cask. Soft chocolate and a nutty oil sit behind the cask. The finish is long, oily and gently spiced. This is the little gem of the Highlands at Pitlochry.
