This Edradour was bottled by the Pitlochry bottler Signatory Vintage, a 10 year old, distilled in 2010, from cask 50, bottled at 46%. Edradour is a Highland single malt from a 19th century farm distillery run by a handful of hands. It was founded in 1825, growing out of an old farmers' cooperative in the glen above Pitlochry.
Worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, for the rich, oily make Edradour is known for. Maturation came in an Oloroso cask, layered over the rich Edradour make. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. Refill oak lets the rich, oily Edradour character lead the way. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Its water comes from the Ben Vrackie springs in the hills above the distillery. The cool Highland air of the glen gives a slow, even maturation in the small Edradour warehouses.
At 46% it is smooth and rich. A full, fruity sweetness, with dried fruit, fig and walnut from the cask. Fig, nut and a creamy malt fill the middle. The close is oily and warming, fruit over a gentle oak. This is Edradour, one of Scotland's smallest distilleries.
