Description
The Pitlochry bottler Signatory Vintage bottled this Edradour, a 10 year old, distilled in 2009, from cask 43, bottled at 46%, one of 740 bottles. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. For years its sign read Scotland's smallest distillery; it now calls itself Scotland's little gem.
The spirit was drawn off the tiny stills and cooled in worm tubs for an oily make, building the creamy Edradour style. An ex-Bourbon barrel shaped it, vanillin lending vanilla under the fruit. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. A small distillery and a hands on approach shape every cask by hand. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings. The tiny stills and worm tubs give an oily spirit that takes the cask well.
At 46% it is rich, nutty and full. Chocolate, dried fruit and a waxy oil, with a soft vanilla from the oak. The texture is oily and creamy, the fruit lifted by vanilla. A rich finish ends on dried fruit and a soft oak. This is Edradour's full bodied, sherried Highland style.
