An Edradour of a 10 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 2009, from cask 381, bottled at 46%, one of 820 bottles. Edradour is a small batch Highland malt, owned by the independent bottler Signatory Vintage. For years its sign read Scotland's smallest distillery; it now calls itself Scotland's little gem.
It was distilled from unpeated malt in tiny copper stills and worm tubs, building the creamy Edradour style. An Oloroso cask held it, shaping the oily spirit over the years. By the integrating teens congeners fade and esters build, the rich, oily spirit growing creamier. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. Signatory's wide cask range gives the small distillery an unusual variety of finishes. Its tiny copper stills and worm tubs give a rich, oily, full bodied spirit.
Reduced to 46%, it is mellow. Dried fruit, chocolate and a nutty oil, with dried fruit, fig and walnut from the cask. A baked apple and a gentle spice lift it. Dried fruit, chocolate and a soft oak see out a long finish. This is Edradour, one of Scotland's smallest distilleries.
