Description
From the Pitlochry bottler Signatory Vintage, a 10 year old Edradour, distilled in 2004, from cask 375, bottled at 46%, one of 928 bottles. Edradour is a small batch Highland malt, owned by the independent bottler Signatory Vintage. A 2018 expansion added a second still house, the production still small and traditional.
It was made in the smallest of stills and condensed in worm tubs, for a rich, nutty spirit with a waxy depth. An Oloroso cask held it, shaping the oily spirit over the years. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and dried fruit. The worm tubs leave an oily weight that carries through the years in cask. Refill oak lets the rich, oily Edradour character lead the way. The full bodied spirit shows the cask clearly, the sherry and oak to the fore.
At 46% it is rich, nutty and full. Dried fruit, nut and a soft chocolate, with dried fruit, fig and walnut from the cask. A baked apple and a gentle spice lift it. The close is oily and warming, fruit over a gentle oak. This is Edradour's full bodied, sherried Highland style.
