An Edradour of a 10 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 1994, from cask 344, bottled at 46%, one of 787 bottles. Edradour is a full bodied, oily Highland malt made on Ben Vrackie water at Pitlochry. It keeps the old ways, with an open cast iron mash tun, Oregon pine washbacks and worm tub condensers.
It was worked through Oregon pine washbacks and tiny stills for a rich, oily spirit, giving the full bodied, creamy Highland spirit. An ex-Bourbon barrel shaped it, vanillin lending vanilla under the fruit. Integration folds eugenol (clove) and vanillin (vanilla) into the oily malt, the body fuller and creamier. Long ageing turns the rich make towards dried fruit, fig and a soft spice. Signatory's wide cask range gives the small distillery an unusual variety of finishes. It is one of the smallest traditional distilleries in Scotland, long run by just two or three hands.
At an approachable 46% it is soft and oily. Dried fruit, fig and a creamy vanilla, with a soft vanilla from the oak. A baked apple and a gentle spice lift it. The finish is rounded, fruity and gently spiced. This is a rich Highland malt from the pocket glen at Pitlochry.
