    Made in small batches in the heart of Scotland's capital, Edinburgh Classic is built on Scottish spring water and a tight roster of botanicals chosen for balance over showmanship. Alongside the juniper sit orange peel, coriander seed and a thread of lavender, the floral note a quiet signature of the Edinburgh Gin house. Bottled at 43%, it carries enough weight to hold its shape in a cocktail without turning loud.

    The nose is fresh juniper laced with citrus and a hint of floral spice. On the palate it runs dry and even, sweet orange and lavender threading through warm coriander, before a long, smooth finish washed with citrus and soft herbs. Pour it into a classic G&T with Indian tonic and a twist of orange zest, or let it carry the gin in a Dry Martini.
