Description
An Eden Mill, a distillery bottling, at 56.8%, 272 bottles in all. Eden Mill is a Lowland single malt from the Eden estuary, distilled in small batches since 2014. The estuary setting gives a low angel's share, around two percent a year.
The spirit was made on water from the River Eden and condensed in shell and tube condensers, building the young Eden Mill style. Matured in a Madeira cask, the wood building over the bright, malty spirit. With no age statement, the cask has given vanillin as vanilla and oak lactones as coconut over the young, cereal driven spirit. A small distillery and an active cask bring a richness beyond the spirit's years. It stands on the site of the Haig family's Seggie distillery, which made whisky at Guardbridge from 1810. Its make matures in racked warehouses at Guardbridge, a few miles from St Andrews.
Bottled at a cask strength 56.8%, it is rich. Apple, pear and a cereal sweetness, with a nutty, raisined sweetness from the cask. Soft orchard fruit and a toasted cereal sit behind the cask. Apple, cereal and a soft oak see out the finish. This is a fresh Lowland malt from the home of golf.
