Duncan Taylor South Pacific Single Cask Rum 2003 is a single cask from Fiji's South Pacific Distilleries, bottled by the Scottish whisky house Duncan Taylor. Distilled on a pot still from molasses, vintage 2003 with ten years in Ex-Bourbon oak and bottled at a cask strength 54.8%, it shows Fiji's distinctive ester driven, solvent forward character in full.
Fiji's rums are known for their funk, and this one leads with solvents and esters up front, joined by citrus, honey and a sour cherry note on the nose. The palate brings burnt sugar, a touch of sweetness, licorice and citrus, with that characteristic sour Fijian edge running through. The finish stays citrussy and fresh with a roasted, young wood note. It harmonises better with time and air, sixty minutes in the glass doing it real favours, and the spiciness and fruit reward patience. Dry and full at cask strength, it is a characterful old Fijian for drinkers who enjoy esters, solvent funk and a sour streak in their rum.
