    Dumbarton Batch 3 (TBWC)

    500ml / 47.8%
    Single Grain

    $164

This Dumbarton was bottled by That Boutique-y Whisky Company, a 22 year old, at 47.8%. A dessert sweet old grain of coconut and vanilla. With the distillery gone, every bottle is from a dwindling stock. Most of its make went into blends; single grain is rare. Closed in 2002, its buildings and red tower were later demolished. This is a rare single grain, silent since 2002.

This Dumbarton single grain was bottled by That Boutique-y Whisky Company, a 22 year old, bottled at 47.8%, one of 75 bottles. Dumbarton was Hiram Walker's great grain distillery, built to supply the Ballantine's blend. Most of its make went into blends; single grain Dumbarton appears only from independent bottlers.

Distilled in continuous column stills for a light, sweet grain, for a delicate spirit that leans on the cask with age. Maturation came in ex-Bourbon wood, vanilla and crème brûlée building with age. Through the evaporative decades ellagitannins lend a polished grip while oak lactones deepen the coconut, mango and butterscotch building. Light grain takes oak readily, the ex-Bourbon lending coconut and vanilla over many years. Long ageing turns light grain into a deep, oily, dessert sweet whisky. Continuous distillation gives a light, clean spirit, so decades in oak drive much of the flavour. No more will ever be made, the distillery silent since 2002.

At a hearty 47.8% it carries real weight. The ex-Bourbon gives coconut from oak lactones and vanilla from vanillin, over a buttery toffee. Beneath it run coconut, vanilla and a soft oil. Toffee and vanilla see out a long finish. This is a vanishing relic of Scotland's largest grain distillery.
