Dr. Bürklin Wolf farms this dry Pfalz Riesling biodynamically across the Wachenheim, Deidesheim and Ruppertsberg vineyards. It is fermented to full dryness and shows green apple, fresh lemon and a fine peach and mineral edge.
Description
Dr. Bürklin Wolf is one of Germany's largest and most respected estates, working sites in Wachenheim, Deidesheim and Ruppertsberg in the Pfalz. Since 2001 the vineyards have been farmed biodynamically, which keeps the soils active and the fruit expressive. The Pfalz sits in the rain shadow of the Haardt hills and enjoys a warm, dry climate for Germany, so the Riesling ripens fully while the region's weathered sandstone and limestone soils hold the acidity and drive the mineral line. The wine is vinified trocken, fermented out to full dryness so the fruit reads as taut rather than sweet, and the low 12.5 percent alcohol keeps it light on the palate. The colour is pale with a green tint. The nose leads with green apple and fresh lemon over a subtle white peach note, framed by white flowers and a stony, saline lift that comes straight from the site. The palate is dry and precise, with bright citrus acidity and a clean, mineral finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It works with grilled white fish, fresh shellfish and lightly spiced Asian dishes where the acidity balances the heat.
