Description
Doniene Gorrondona works on the Atlantic coast of the Basque Country in the D.O. Bizkaiko Txakolina, part of the revival of quality Txakoli that began in the 1980s after phylloxera and industrialisation had cut the region's vineyards in half. The grape is the local Hondarrabi Zuri, grown in a cool, wet, maritime climate that keeps acidity high and the wine light on its feet. This is a more serious style than the usual spritzy Txakoli, aged on its lees to build texture and depth, the mannoproteins from the spent yeast rounding the palate and adding a subtle nutty note while the coastal freshness holds. Farming is sustainable. The colour is a bright lemon-yellow. The nose is aromatic, with green apple and citrus over hazelnut and a stony, saline note. The palate is dry, fresh and youthful, with sharp Atlantic acidity carrying the fruit through a clean, saline finish. Serve well chilled at 8 to 10 degrees in a white glass. It suits fresh shellfish, grilled fish and anchovies, and its acidity works with fresh goat cheese.
