Williams and Humbert’s Don Zoilo Palo Cortado en Rama spends 15 years in solera, drawn unfiltered. From Jerez Palomino, it shows walnut, hazelnut and dried orange peel over a dry, structured, saline palate of real depth.
Description
Don Zoilo Palo Cortado en Rama 15 Años is a Jerez sherry from Williams and Humbert, made from Palomino grown on the albariza chalk of the Marco de Jerez. Palo Cortado is the scarce middle path of the sherry styles, beginning under flor like a Fino before the veil fades and the wine is fortified higher to continue oxidatively, taking the aromatic finesse of an Amontillado with the body of an Oloroso. This bottling carries 15 years of ageing in the criaderas and soleras system. Over that time the slow exchange of air through the oak bota converts ethanol to acetaldehyde and concentrates the wine, building deep walnut, hazelnut and dried-peel complexity. En rama means it is bottled with minimal filtration, so more of the texture and aroma developed in cask reaches the glass. Fortified to around 19.5 percent, it is amber to mahogany in colour, with a smoky, nutty, savoury nose, and a dry, structured palate carrying earthy depth and a long, saline finish. Serve lightly cool at 13 to 15 degrees in a tulip glass with rich savoury dishes.
