Description
Don Julio Ultima Reserva is a limited extra anejo released as a homage to founder Don Julio Gonzalez, who died in 2012. It is distilled from Blue Weber agave at the family's Atotonilco el Alto house in the Los Altos highlands, and is made from the last agave harvest tied to Don Julio and his family, plants grown in 2006. It is the first Don Julio tequila matured in a sweet wine cask.
The spirit is aged in Madeira casks through a solera like process, layering older and younger stock to build depth. With more than three years in wood it sits firmly in the extra anejo class, and the fortified wine barrel pushes it toward dried fruit, raisin and vanilla over a sweet, rounded base. Agave moves to the mid palate beneath the cask, giving a rich, dense and distinctly wine inflected finish.
