Don Fernando Añejo is a Blue Weber tequila aged 24 months in American oak casks, well beyond the one year minimum for the añejo class. It is built in the classic mould, with agave harvested by hand by a jimador who cuts away the pencas and lifts the heavy piñas before they are cooked. The brand presents it as an elegant, fruit forward style for those who favour the traditional añejo profile.
The piñas are baked in masonry stone ovens, the hornos, for up to 48 hours, then crushed and pressed on a traditional roller mill to separate juice from fibre. Fermentation uses a natural yeast with no chemical additions to convert the sugars. Two years in oak draw out an elegant sweet and fruity harmony, notes of dried fruit and almond, and a wood edge from the cask, while agave remains the first note on the palate before a finish of caramel and agave. Bottled at 38%.
