Description
Domiziano makes this Primitivo di Manduria in Puglia, the heel of the Italian boot, a region of dazzling coastline and long Mediterranean summers. Primitivo ripens early and hard under that sun, building high sugars that ferment to a generous 16% alcohol along with dark, almost jammy fruit. The vineyards are farmed organically, and the wine is aged for seven months in stainless steel rather than wood, so the fruit stays clean and forward and the colour holds a deep ruby. Without oak the focus falls on the grape itself, with the warmth of the climate giving a faintly sweet, raisined edge typical of southern Italian reds. The nose leads with ripe raspberry, plum and black cherry, turning to date, black pepper and a dusting of cocoa. The palate is full, soft and round, with ripe tannins and a warming finish. Serve at 16 to 18 degrees. Its sweetness of fruit and gentle structure make it a natural match for grilled and braised meats and for boldly spiced dishes.
