Description
Dominio do Bibei was founded in 2000 by a group of young winemakers set on showing the potential of Galicia's dramatic river valleys, with backing from Sara Pérez and René Barbier of Priorat renown. The estate sits at Langullo in Ourense, on steep terraces of slate and schist that force low yields and lend a mineral spine to the wines. Treixadura is a native Galician white known for orchard fruit and a broad, textured palate that rewards ageing. This Lalume spends twelve months on its lees in a range of barrels, an unusually long élevage for the grape; the extended lees contact releases mannoproteins that fill out the mouthfeel, while the slow oxygen exchange through the wood rounds the fruit and adds a nutty complexity without heavy oak flavour. The colour is a bright golden straw. The nose is layered, with white peach and ripe pear over almond, beeswax and a honeyed note. The palate is rich and textured yet firm, with citrus peel and a saline mineral thread from the slate keeping it fresh through a long, savoury finish. Serve at 10 to 12 degrees, and give it a little air.







Additional information
The body and lees texture here suit fuller seafood and white meats. Serve with monkfish, hake in a green sauce, seafood rice or roast chicken. Its nutty depth also matches aged hard cheeses.
