Description
Dominio del Soto works in the D.O. Ribera del Duero, a region far better known for its reds, and this crianza is part of a growing movement of serious whites made there from the native Albillo grape. The estate has drawn on the experience of Chapoutier, the Rhone Valley family, in shaping the wine. Ribera del Duero lies on a high plateau, and the combination of altitude and sharply cold nights gives a wide diurnal range that keeps acidity firm while the grapes ripen. The wine is aged eleven months in oak barrels. The barrel maturation, with slow oxygen exchange through the wood and time on the lees, builds a creamy texture, a gentle toast and spice, and greater ageing potential, while Albillo's fresh fruit holds the centre. The colour is golden straw. The nose shows pear and white peach with vanilla, toasted bread and a honeyed note. The palate is dry and textured, the oak well integrated, with a long finish carrying almond and beeswax. Serve at around 11C in a white wine glass.






Additional information
The oak and creamy weight suit roast chicken, pork loin and baked white fish with butter. It also pairs with hard nutty cheeses and lightly creamed vegetable dishes.
