Description
Dominio del Soto makes this white from Albillo, the native pale grape of Ribera del Duero, a high plateau in Castilla y Leon far better known for Tempranillo reds. Altitude defines the site: the elevated continental plateau brings hot days and cold nights, and that wide diurnal swing lets the grapes ripen while holding the acidity that keeps a white fresh in such a warm, dry climate. The wine is farmed respectfully and aged twelve months in demi-muids and stainless steel on its lees. The stainless portion preserves primary fruit and cut, while the large-format demi-muids and extended lees contact add a rounded texture and a faint nutty depth through the slow release of mannoproteins, with minimal oak flavour from the seasoned wood. The colour is pale straw. The nose shows green apple, white peach and pear over white flowers, and the palate is dry and mineral, with a gentle almond note and a firm line of acidity into a clean finish. Serve at 9 to 11 degrees.
