Cillar de Silos makes Dominio del Pidio Tinto in Ribera del Duero from old vine Tinto Fino with a little Albillo. Fermented in cement and wood and oak aged, it is a deep, structured red of dark cherry, plum and spice.
Description
Cillar de Silos created the Dominio del Pidio project in Quintana del Pidio, a historic winemaking village in the Ribera del Duero in Castilla y León. The wine is mostly Tinto Fino, the local Tempranillo, with a small share of the white grape Albillo co-fermented to lift aromatics and texture. The fruit comes from old vineyards on the high Ribera plateau, where altitude brings cold nights that hold acidity and colour, and the chalky clay and limestone soils give the wine depth and grip. Fermentation takes place in cement and wood, vessels that allow a slow, gentle ferment, before ageing in French oak. The fifteen months in barrel allow slow oxygen exchange that softens the tannins and adds vanilla and spice. The colour is a deep, dense ruby. The nose shows dark cherry and plum over earth, oak spice and a touch of leather. The palate is full bodied, with firm ripe tannin, fresh acidity and a long, structured finish. Serve at 17 degrees, decanted ahead, with roast beef, lamb or mature hard cheese.
