Description
Dominio del Bendito farms in D.O. Toro, on the high plateau of Castilla y León, where old vines sit on sandy and stony soils under a continental climate of hot summers and cold nights. Perlarena is a rosé built from two red grapes, Syrah and Tinta de Toro, with a small symbolic share of the white Verdejo, all harvested together before the main red picking so the fruit comes in fresh rather than overripe. Picking early keeps acidity high and alcohol moderate, and the result is a pale, elegant pink wine rather than a heavy one. A portion of barrel work adds texture and breadth without dominating the fruit, and the farming is respectful and sustainable. The nose leads with strawberry and redcurrant, citrus peel and white flowers, with a distinct aniseed note running through. The palate is dry and broad, with fresh red fruit, pear and a clean citrus finish carried by the continental acidity. Serve chilled at 8 to 10 degrees.
