    Dominio D'Echauz Tinto comes from D.O. Ribera del Duero and is made by Rafa García, who leads Vitis Navarra, the nursery founded by the García-Baigorri family in 1906. The fruit is grown in Soria, long the overlooked corner of Ribera del Duero, where vineyards sit at close to 1,000 metres of altitude. That elevation, once seen as a liability, now suits the warming climate, as the high, cool sites ripen later and hold freshness in the fruit. The blend is Tempranillo with Cabernet Sauvignon and Garnacha Tinta. It spends seven months in oak barrels, a short ageing that keeps the wine fresh and fruit-driven while the oak rounds the tannins through slow oxygen contact. The colour is bright, deep cherry. The nose shows black fruits such as blueberry and blackberry alongside red berries and a touch of liquorice. The palate is medium-bodied and savoury, with cherry, plum, fine tannin and an earthy, lightly oaked finish. Serve at 16 to 18 degrees. It pairs with roast lamb, grilled beef and mushroom dishes.
