Dominio d’Echauz grows Albillo Mayor in the high Soria end of Ribera del Duero, at around a thousand metres. Eight months in oak barrel add texture to a white of peach, pear, tropical fruit and toasted almond, kept fresh and mineral by the extreme altitude.

Description
Dominio d'Echauz farms in the Soria stretch of Ribera del Duero, in the far east of the appellation, at an altitude of around a thousand metres. The grape is Albillo Mayor, the region's traditional white, long grown among the red vines. At this height the vineyards see hot days and very cold nights, one of the widest diurnal ranges in Spain, which slows ripening and locks in acidity, so the wine keeps a firm mineral freshness even as the fruit ripens. The soils are limestone and stony clay, adding to the stony character. After a gentle pressing the wine is aged eight months in oak barrels, where time on the lees and slow oxygen exchange through the wood build texture and a light nutty depth without covering the fruit. The colour is a clean, gleaming straw yellow. The nose shows peach, pear, tropical fruit and toasted almond. The palate is fresh and textured, with ripe stone fruit, a fine mineral line and a long, savoury finish. Serve at 10 to 12 degrees in a white wine glass.
