Description
Dominio de Es is run by Bertrand Sourdais in Atauta, a high, remote corner of the Soria end of Ribera del Duero in Castilla y León. The wine is built on old vine Tinto Fino, the local Tempranillo, with a small share of the white grape Albillo co fermented to lift aroma and texture. Atauta sits at altitude on poor, sandy and stony soils, with hot days and cold nights whose wide diurnal range slows ripening and locks in acidity and colour. Many of the vines are ungrafted and old, giving low yields of concentrated fruit. Farming is organic and biodynamic, with native yeast fermentation, and ageing follows in French oak that softens the tannins through slow oxygen exchange while keeping the fruit clear. The wine is deep cherry red, with blackberry, ripe plum and dark cherry over earth, spice and a floral lift from the Albillo. The palate is structured and fresh, the tannins firm and fine, the acidity bright, the finish long and savoury. Serve at 16 to 18 degrees, decanting on a young vintage. It pairs with roast lamb, grilled beef and mushroom dishes.
