Dominio de Elbio makes Salvio in Ribera del Duero’s La Horra, from Cabernet Sauvignon, Merlot and Tinto Fino. Aged just three months in barrel, it is a fresh, floral young red, with violet, ripe red fruit and a savoury, gently spiced palate.

Description
Dominio de Elbio works in the heart of Ribera del Duero, around La Horra in the so-called magic triangle where limestone and clay soils meet a harsh continental climate. Salvio is a young red built from Cabernet Sauvignon, Merlot and Tinto Fino, the local name for Tempranillo. The wide diurnal swing of the high Castilian plateau, with hot days and cold nights, ripens the fruit while locking in colour, acidity and aromatic freshness. This is made in a deliberately fresh style, with only three months in barrel, so the oak plays a supporting role and the wine keeps its bright, floral character rather than a heavy structure. The colour is a deep, youthful purple. The nose is floral and vibrant, with violet, ripe raspberry and plum over a light peppery spice and a touch of liquorice. The palate is medium bodied and savoury, with juicy red and dark fruit, fresh acidity, gentle tannin and a clean finish. It drinks well now and needs no cellaring. Serve at 16 degrees in a standard red glass. It suits grilled meats, lamb and roast pork.
