Description
Domaine Weinbach is one of the most respected estates of Alsace, and this wine is an exception to the region's usual single varietal path, blending Pinot Gris, Pinot Blanc and Auxerrois from the Furstentum Grand Cru near Kaysersberg. Furstentum is a warm, well exposed slope of limestone rich soils that ripens the Pinot family fully while retaining freshness. Farmed biodynamically, the wine is barrel fermented and then aged for 14 months on its lees in cask, a method that adds weight, a creamy texture and a fine savoury depth rather than obvious oak. Pinot Gris leads the blend with body and stone fruit, Pinot Blanc and Auxerrois add roundness and a soft floral character, and the limestone keeps the whole balanced and mineral. Expect a deep straw colour and a nose of white peach, pear, honey, white flowers and a touch of ginger spice. The palate is rich and dry to just off dry, broad and textured, with a long, gently spiced finish. Serve at 11 to 13 degrees in a large glass.






Additional information
The richer Pinot Gris body suits roast pork with apple, chicken in a cream sauce and richer fish such as monkfish. It also handles mild spice, so lightly spiced Asian dishes work well. Nutty hard cheeses and washed rind styles are a good match.
