Description
Domaine Vacheron Le Rosé is a Pinot Noir rosé from AOC Sancerre in the Loire Valley, made by cousins Jean-Laurent and Jean-Dominique Vacheron. The estate farms biodynamically and holds some of the most sought-after sites in the appellation, working the Pinot Noir with the precision of a Burgundy grower. Sancerre's Kimmeridgian limestone and flint soils give the wine its tension and a flinty, saline edge, while the cool Loire climate keeps the fruit delicate and the acidity high. The juice is run off pale and fermented gently, then the wine is aged on its lees. That lees contact adds texture and a subtle savoury depth as the spent yeast releases mannoproteins into the wine, broadening the mid palate without masking the fruit. The colour is pale and luminous. The nose is fresh and precise, with red berries, white peach and white flowers over a stony note. The palate is dry and taut, the delicate red fruit framed by bright acidity and a mineral, faintly salty finish. Serve at 8 to 10 degrees in a white wine glass. It suits shellfish, grilled white fish and lighter poultry.
