Domaine Trapet farms this Gevrey-Chambertin biodynamically in the heart of the Cote-d’Or. A village Pinot Noir at 12.5% alcohol, it shows red cherry, rose and forest-floor earth, with the fine tannin and bright acidity that mark classic red Burgundy.

Description
Domaine Trapet has roots in Gevrey-Chambertin going back to 1870 and is now run by Jean-Louis Trapet, an early adopter of biodynamic farming across the estate. This Ostrea cuvee is Pinot Noir from the village of Gevrey-Chambertin in the Cote-d'Or. The limestone and marl soils of the Cote give Burgundian Pinot its combination of red fruit, structure and minerality, while the cool continental climate and marked diurnal range preserve acidity and slow ripening for aromatic complexity. Biodynamic viticulture keeps the soils living and the fruit expressive. Ageing in oak, with a measured share of new barrels, lends spice and grip without masking the fruit. From the 2015 vintage, a warm and generous year, the wine shows a translucent garnet colour and a nose of ripe cherry, red berries and rose, moving to forest-floor earth, leather and a touch of woodsmoke with bottle age. The palate is medium bodied, the tannins fine and the acidity fresh, carrying a savoury, persistent finish. Serve at 16 degrees, decanting briefly. It is at home with roast duck, game birds and mushroom dishes.
