Domaine Trapet is based in the village of Gevrey-Chambertin, in the heart of Burgundy's Côte-d'Or, where Jean-Louis Trapet has a reputation for wines of purity, finesse and elegance. The estate has been certified biodynamic since 2009, farming with close attention to the health of the soil. This village Gevrey-Chambertin is pure Pinot Noir from the limestone and clay-limestone soils that define the Côte de Nuits, giving structured, mineral reds with a firm backbone. The cool continental climate and marked day-to-night temperature swing preserve acidity and lift the aromatics, which is central to Burgundian Pinot. Vinification favours transparency, and ageing in French oak, mostly used, adds structure and gentle spice through slow oxygen exchange without masking the fruit. The colour is a bright, medium ruby. The nose is fragrant, with red cherry, wild strawberry and raspberry, rose and a savoury forest-floor character. The palate is medium bodied and finely structured, the tannins silky, the acidity fresh, carrying an earthy, mineral finish that reflects Gevrey. Serve at 16 degrees in a large Burgundy glass. It is a classic match for roast duck, game birds and mushroom dishes.
