Description
Domaine Tollot-Beaut is a long-established family estate in Chorey-lès-Beaune, on the Côte de Beaune in Burgundy, France, and was among the first in the area to estate-bottle its wines back in 1921. This village red comes from Pinot Noir grown on the gravel and clay-limestone soils of the flat land around Chorey, ground that drains well and gives a more open, fruit-forward style of Burgundy. The limestone bedrock lends freshness and a fine mineral line, while the cool Côte d'Or climate keeps acidity high and tannins refined. The wine is aged sixteen months in large oak foudres rather than small barrels, so oak flavour stays in the background and the slow, gentle oxygen exchange simply rounds the tannins and adds savoury complexity. The colour is deep ruby. The nose shows red cherry and wild berry over forest floor, dried herbs and a touch of leather and undergrowth. The palate is medium bodied and silky, with bright acidity, fine supple tannins and an earthy, mushroomy finish framed by gentle oak. Serve at 15 to 16 degrees, decanting briefly. It is a natural partner for roast poultry, game birds and mushroom dishes.
