Description
Domaine Schaller is a young organic producer in Chablis, the northern outpost of Burgundy where Chardonnay takes on a leaner, more mineral character than it does further south. The vineyards sit on Kimmeridgian limestone, a soil rich in ancient marine fossils that gives Chablis its trademark chalky, saline quality. The cool continental climate here means slow ripening and naturally high acidity, and spring frost is a constant risk that keeps yields modest. Camille Schaller works organically and ages the wine for ten months in stainless steel rather than oak, a choice that preserves the fruit and lets the soil speak without any woody overlay. The 2023 is pale with a faint green tint. The nose is precise, showing green apple, lemon and pear with a note of white flowers. The palate is dry and taut, its acidity bright and its finish stony and salted. This is Chablis in its classic register, clean and food-friendly. Serve well chilled at 9 to 11 degrees in a white wine glass.
