Description
Domaine Rossignol-Trapet is run by brothers Nicolas and David Rossignol from their base in Gevrey-Chambertin, following the division of the family estate in the late 1980s. This Bourgogne rouge is made from Pinot Noir grown on the limestone and clay soils of the Cote de Nuits, farmed by respectful, sustainable methods. The cool continental climate and the calcareous ground are central to the grape's character here, giving bright acidity, a fine, savoury structure and the earthy minerality Burgundy is known for. Fermentation is followed by twelve months in French oak, a portion of it new, which rounds the tannin and adds a light spiced frame through slow oxygen exchange without masking the fruit. Malolactic fermentation in barrel softens the wine's natural acidity and adds a subtle roundness to the texture. The colour is bright, pale ruby. The nose shows red cherry and raspberry over forest floor and a touch of oak spice. The palate is medium bodied and fresh, with fine, silky tannin, lively acidity and a savoury finish. Serve at 15 to 16 degrees. It suits roast poultry, duck and mushroom dishes.
