Description
Domaine Rolet Arbois Vin Jaune is a flor-aged white from AOC Arbois in the Jura, made entirely from Savagnin by a family estate working these vineyards since 1942 and farming organically. Vin Jaune is one of the most distinctive wines in France. After fermentation the wine is left in old barrels for a minimum of six years and three months, deliberately not topped up so that a film of yeast, the voile or velo de flor, forms on the surface. The wine ages under this veil, which shields it from full oxidation while the slow exposure to air converts alcohol to acetaldehyde and the yeast metabolism drives its savoury, nutty character. The Jura's marl and limestone soils and cool continental climate give Savagnin the high acidity it needs to survive this long ageing. The result is an intense golden colour and a powerful nose of walnut, dried apricot, almond, nutmeg and beeswax, with the tell-tale curry-spice tone of the style. The palate is bone-dry, tangy and long, with a saline, umami depth and remarkable persistence. Serve at 14 to 16 degrees in a small tulip glass.







Additional information
The traditional match is Comté and other hard nutty cheeses, cut by the wine's tang. It also suits roast chicken, chicken in a cream and morel sauce, and richer white fish. Serve at cellar temperature, not cold, in a small glass; an open bottle keeps for days.
