Description
Domaine Pignier makes this Vin Jaune in the Jura, in eastern France, under the AOC Côtes du Jura. The wine is made from Savagnin, picked as ripe as possible on the region's grey marl soils, and it is farmed biodynamically and organically. What sets Vin Jaune apart is the ageing. After fermentation the wine goes into old Burgundy foudres and rests for a minimum of six years, here seventy-two months, with no racking, no movement and no topping up of the barrels. As the wine slowly evaporates, a layer of yeast known as the velo or voile forms on the surface, similar in principle to the flor of Sherry. This film protects the wine while allowing controlled oxidation, converting alcohol into acetaldehyde and driving the intense nutty, savoury character that defines the style. The result is bottled in the squat 620 ml clavelin. The colour is deep gold. The nose is powerful and oxidative, with walnut, dried apricot, almond, beeswax and a warm curry spice. The palate is bone dry, full and long, with a savoury, saline grip that lasts for minutes. Serve at 14 to 16 degrees in a wide glass.
