Description
Domaine Pignier traces its roots to Carthusian monks in Montaigu, and since 1794 has been run by the Pignier family, today the siblings Jean-Etienne, Antoine and Marie-Florence, all under biodynamic certification. This white comes from Savagnin, the classic grape of the Jura, grown on the marl soils of the Cotes du Jura in a cool, damp continental climate. It is aged sus voile, under a veil, meaning the barrels are left partly unfilled and a film of flor yeast grows across the surface. The flor protects the wine from full oxidation while feeding on it, converting alcohol and generating compounds that give the nutty, savoury character the region is known for, close in style to a young Vin Jaune. The result is a deep golden wine with green apple, walnut, almond and a curry and dried herb spice, a dry, incisive palate and a long saline finish that grips the sides of the mouth. It benefits from decanting and takes a larger glass. Serve at 12 to 14 degrees.
