Description
Domaine Pignier is run by the Pignier siblings, the seventh generation of a family whose winemaking in Montaigu dates back to 1794. The estate has been farmed biodynamically since 2002 and is certified by Demeter. This wine is made from Poulsard, a Jura speciality grown in the Cotes du Jura appellation on the region's marl and limestone soils, which retain water and lend freshness and a saline mineral edge in a cool continental climate. Poulsard is a thin-skinned, lightly pigmented variety, so it is handled gently with a short, cool maceration to keep the wine pale and preserve its delicate aromatics rather than extract tannin and colour. Ageing in old wood adds texture while leaving the fruit clear. The wine is very pale ruby, almost translucent. The nose is fragrant and precise, showing redcurrant, wild strawberry and cherry with rose and a light earthy, mineral note. The palate is light and fresh, with low tannin, bright acidity and a savoury finish. This is a red to serve cool and drink for its perfume and drinkability. Serve at 13 to 15C, lightly chilled. Good with roast chicken, charcuterie and firmer fish.
