Description
Domaine Pignier is a Jura estate whose vines were first planted in the 13th century by Carthusian monks on the Montaigu slopes, and which the seventh generation of the Pignier family now farms biodynamically. Les Gauthières is made from Trousseau, a thin-skinned local red that gives pale, perfumed and lightly structured wines. The vineyards sit on the grey marl and limestone scree of the Jura, soils that suit this delicate grape and lend a chalky, savoury edge. The regional climate is cool and continental, with a marked day-to-night temperature swing that protects acidity and the fine aromatics Trousseau is prized for. Winemaking is low intervention, with native-yeast fermentation and ageing in old wood that adds no oak flavour but lets the tannin settle through slow oxygen exchange. The colour is light translucent ruby. The nose shows redcurrant, cherry and white pepper with a dried-herb and earthy character, and the palate is light and fresh, with gentle tannin, vivid acidity and a clean, savoury finish. This red takes a light chill. Serve at 14 to 16 degrees with charcuterie, roast pork or poultry.
