Domaine Perrot-Minot’s Gevrey-Chambertin from the Justice des Seuvrees vines on clay over limestone in the Cote de Nuits. This cool-vintage 2021 Pinot Noir is elegant and finely structured, with red cherry, raspberry, violet and a savoury, earthy base.

Description
Domaine Perrot-Minot makes this red from Gevrey-Chambertin, the largest of the great communes at the northern end of the Cote de Nuits in Burgundy. Justice des Seuvrees comes from vines on the lower slope, where deeper clay over limestone gives Pinot Noir more flesh and colour than the thinner soils higher up. The east-facing incline of the Cote d'Or and its cool continental climate hold acidity and let the fruit ripen slowly through a long autumn. The 2021 vintage was cool and small after spring frost, giving wines of freshness and precision. Fermentation and ageing in French oak, part of it new, frame the fruit without covering it. The colour is a bright medium ruby. The nose shows red cherry, raspberry and violet over a savoury base of earth and light spice. The palate is medium-bodied and finely structured, with bright acidity, fine tannin and a mineral, gently earthy finish. This is classic Gevrey Pinot Noir, elegant and built to age further in bottle. Serve at 16 degrees in a large glass. It suits roast duck, chicken and mushroom dishes.
