Description
Domaine Nathalie et Gilles Fevre make this Chablis from family vineyards in the Chablis appellation of Burgundy, France, a heritage that reaches back to 1745. Chablis is Chardonnay in its most mineral form, and the soil is the reason: Kimmeridgian marl, a grey limestone clay packed with tiny fossilised oyster shells, which lends the wine its stony, saline character and its firm, citrus-driven acidity. The region's cool, northerly continental climate ripens the grape slowly, keeping the fruit lean and precise. The wine is fermented and aged in stainless steel, with no oak, so the fruit and the terroir stay pure and sharp, and time on the fine lees adds just enough texture without softening the cut. The colour is pale with green tints. The nose is clean and bright, with lemon, green apple and white flowers over a wet-stone, flinty minerality. The palate is dry, light and taut, the citrus fruit driven by a chalky acidity to a long, saline finish. Serve well chilled at 9 to 11 degrees. It is a classic partner for oysters and shellfish, and suits white fish just as well.
